Corina said she started her Cinco de Mayo with Migas... had never heard of that dish and Corina supplied this description...yes, I think I could eat this!
Migas = crumbs. Corn tortillas cut into bite size pieces, lightly sautéed
in butter with chopped onions, tomato [remove seeds]and Serrano peppers, stir in
a couple of scrambled eggs and season with salt, pepper, garlic powder. When
eggs are done sprinkle shredded cheddar cheese..cover pan just till cheese
melts. Mmmmmmmmm
I love them. I think Michelle makes good migas.
